One week in the south of Spain. I told myself I reaaaaallly deserve this vacation. It's been one hell of a summer. Long story short: I quit my new job. It wasn't what I had hoped for and I decided my only choice was to focus on my own personal (creative) growth. It feels weird to not spend more than two sentences on this topic, but unfortunately there's nothing more to say.
I am working on some projects and plan to make a living as a freelance writer/photographer/content creator. An exciting time once again. And so different from being a full time editor at the country's top news organization, which I was until June this year. But I am fine with it, feeling happy, inspired and energized. That is all that matters!
But first: sunbathing on the beach, long walks, too much ice cream, watching the sun set, night after night, and spending time with family.
This recipe is perfect for those last days of summer. Very easy to make, so much flavor, healthy, and very refreshing. I recommend you to make it right now!
Strawberry & watermelon agua fresca (w/ honey, lime & sparkling water)
makes one large jug
1 watermelon, cut in cubes
2 cups strawberries
1 lime, juice
1 tbsp honey (or agave syrup for vegans)
1 cup water
1 cup sparkling water
A few sprigs of mint
A splash of coconut water (optional)
How to make it:
1. Juice the watermelon and the strawberries, or alternatively blend and strain afterwards.
2. Add the lime juice and the honey and stir well.
3. Add all the water and if you like to a splash of coconut water as well.
4. Serve over ice with some fresh mint & slices of lime.
