So things are going to change around here. From now on, blog posts will be primarily in English. Since I enjoy writing in English, and I'd like to maintain that skill, and as a plus I can reach more readers, I've decided to switch languages.
So how are things? I am feeling alright again. Caught the flu last week which really annoyed me. Remember when you were a kid, and you thought that staying a day home from school sounded actually not so bad. Mommy spoiled you, you got to watch television all day. Well things are different when you are a grown up. But I took care of myself (and still watched many episodes of How I Met Your Mother) and today I went back to work again.
AND, I almost forgot to mention: snowflakes fell from the sky last Saturday! I absolutely loathe winter, but I love snow. Don't know how that's possible, but it's true. Maybe it's because most of our winters here in The Netherlands are pretty much snowless. So my boyfriend and I took a short walk through our neighborhood, where all these pretty Pippi Longstocking houses are. Villa Villekulla they call it in Sweden I think. Beautifully covered in a blanket of snow.
The air was so crisp and the sound your shoes make when you step on untouched snow is magical don't you think? Nevertheless, I am starting to long for spring. The days are slowly becoming longer and I bought a bunch of tulips to brighten our home.
Except for all these spring-like feelings I also seem to have the travel bug. Maybe it's the sum of these dark days I'm having enough of and a shortage of vitamin D. But I really feel like exploring and seeing more of the world.
This mango lasso reminds me of warmer days, happiness and exotic destinations. It has all the traditional ingredients: yoghurt, cardamom, and of course mango, but I added some new flavors as well. The classic lassi turns into a delicate shake and definitely has a certain richness to it. So if you're feeling the winter blues, give this recipe a try!
Mango Lassi with orange, coconut milk and chamomile
Makes two regular sized glasses
3/4 cup yoghurt (sub for soja yoghurt or coconut yoghurt if vegan)
1/3 cup coconut milk
1/4 cup water
4-6 ice cubes
1 mango, cut into cubes
1 teaspoon honey (use alternative such as rice syrup if vegan)
1 teaspoon turmeric
1/4 teaspoon cardamom
1 chamomile teabag
Boil water and steep the tea. Use 1/4 cup for the lassi. Cool in the fridge and pour into a blender when chilled.
Add the remaining ingredients and blend. Enjoy the mango lassi cold.
