Rose fish ceviche w/ lime, shallots & green herbs

Oh boy. I planned on posting this blog post mid-August. That didn't happen. I sometimes wonder if I should take a course in planning my life & work. Please share some good advice below in the comment section, because I need it. Anyhow, this ceviche. I am really starting to love a good ceviche. I don't have much else to say about it, except that I urge you to try it yourself! Here's the recipe. -x-

You need:

275 g Norway Haddock
6 shallots, cut in rings
1/2 red pepper, cut in rings
3 limes, juice
fresh herbs, finely chopped
ice cubes
1 sweet potato
baby corn
himalaya salt 

How to make it:

1. Wash the fish in the water. Fillet it and cut the fish in pieces of about 2 cm. 

2. Add the fish to a bowl and season with salt. Add the onion, red peper, the lime juice and half of the fresh herbs. Mix to combine.

3. Add two ice cubes to the ceviche and stir. Remove them after a minute and let the ingredients soak for another 30 seconds. Mix and serve together with the rest of the fresh herbs.

Note: I served my ceviche with some baby corn & oven roasted sweet potato, seasoned with sea salt and some rosemary. I recommend doing the same as the ceviche alone was delicious, but not enough for an entire meal.  .
