White peach & rooibos iced tea sweetened with honey & mint
A long time ago, I read somewhere that when you're happy in life, you listen to the music, while when you're sad, you listen to the lyrics. It's true.

Why I am quoting these lyrics? They give me strength, they help me heal. It's not that I am super sad or anything, but these past twelve months have been a personal challenge, regarding my career. I don't want to bother you with all of this, as my blog isn't a diary (though I sometimes forget that 🙊). What I can say is that all the shitty things that happened, the injustice, even betrayal, the bad judgements, they have accumulated to a very strong believe in my own abilities, a sense of worthiness I perhaps didn't have before. I absolutely can't wait to close this chapter and start writing new ones soon.

For now, let's enjoy some iced tea. This recipe is so easy yet leaves you with a very flavorful and sweet (but not too sweet) beverage to enjoy on those hottest days of the year. And the combination of warm rooibos notes and fresh peach definitely cheers me up! I love using my new bonavita teapot that I received from my favorite kitchen store, Oldenhof, for this, as the filter makes preparing the iced tea so much easier.
White peach & rooibos iced tea with fresh mint and honey
3 bags of rooibos tea
1 liter water
3 white peaches, juiced
1 sprig of mint, leaves
1-3 tbsp of honey (to taste)
How to make it:
1. Bring water to a boil. Add to a teapot. Brew the tea by adding the bags of rooibos. It doesn't matter if you cut the bags open or not. If you do cut them open and your pot doesn't contain a filter, make sure to strain the tea before adding the peach juice.
2. Set the tea aside for 30 minutes. Place the peaches in a juicer and pour the juice into the teapot. If using a blender, strain before adding to the rooibos tea.
3. Combine the mixture by stirring. Add the honey and mix again. Add the tea leaves and place in the fridge for at least 20 minutes.
4. Remove from the fridge. Stir once again and serve over ice. Enjoy!
