Valentine | Kefir pancakes with vanilla poached plums
I don't celebrate Valentine's Day. In fact, today I read in the news that most Dutch don't. We're just too down-to-earth I guess.
But, and I wrote this last year as well, I actually do kind of like this celebration when it involves food. Because to me, food is about love and love can also be about food. So that is why I do share a Valentine recipe. And a big plus: these pancakes should be eaten in bed together.

The very convenient serving tray is sold at Day Kitchen, my favorite kitchen store in Amsterdam. It is made by a lady from Amsterdam and I absolutely adore it. It also came in useful when I had the flu last week.
Back to the recipe. These spelt & kefir pancakes are really easy to make, good for you, and frrreakin' delicious, I tell ya. The kefir, besides being super healthy, makes the pancakes chewy and soft. And who doesn't like that. So be a nice gent or lady and get up half an hour before you'd otherwise do and bake these pancakes tomorrow. Or not. Either way, it is fine by me.

Kefir pancakes with vanilla poached plums
3/4 cup spelt flour
1 tsp baking powder
1/2 tsp ground vanilla
a pinch of salt
2 tbsp maple syrup
3/4 cup kefir (or buttermilk)
For the poached plums
5 plums, cut in half
2 tbsp honey or sugar
1 vanilla pod, seeds scraped
1/2 cup water
For the maple butter
75 grams unsalted butter, room temperature
2 tbsp + 1 tsp maple syrup
How to make it:
1. Place the dry ingredients for the batter in a bowl. Stir to combine.
2. Separate the eggs. Add the whites to a different bowl. Set aside.
3. Add the yolks to the bowl with the flour. Pour the kefir in there as well. Mix well.
3. Whisk the egg whites until they are fluffy and form peaks. Using a spatula, fold the egg whites into the batter.
4. Add a teaspoon of coconut oil in a non-stick frying pan and bake the pancakes on low heat. They need about a minute on each side. Spread with maple butter and top with some vanilla poached plums. Enjoy <3!
For the vanilla poached plums
1. Place the plums in a bowl. Add the honey and vanilla and stir to coat. Let sit for about 5 minutes.
2. Add the coated plums and the water to a sauce pan. Bring to a boil and let simmer for about 10 minutes. Set aside.
For the maple butter
1. Whip the butter & maple syrup with a standing mixer until pale and fluffy.
