Vanilla & blueberry ice cream sandwiches with salted white chocolate cookies

24th of August. My last blog post. Gosh, it seems ages ago. And in many ways, that's true. I moved to Utrecht, split up with Rob, started a new chapter. More than one actually. All at once. Timing has never been my strongest suit, maybe. It has been chaotic, intense, wonderful, sad, unforgettable, painful, revealing. Writing a blog just wasn't on my mind. I didn't know what to say. But we can't wait forever, can we. More than eight weeks have passed. I was starting to miss this place. I miss writing, sharing my thoughts, sharing good food.

The recipe I'm sharing with you today is actually one I'd prefer to make on warmer days, but hey what does it matter. Just turn up the heat and eat these ice cream sandwiches while you're all curled up under a blanket on the couch. I mean, it's not like we don't eat B&J in winter. right?


Vanilla & blueberry ice cream sandwiches
with salted white chocolate cookies

(8 persons)

You need:

1/3 cup or 80 ml coconut oil
1/3 cup or 80 ml rice syrup
2 tablespoons almond milk
1 vanilla pod, seeds
2 cups oat flour
65 grams coconut sugar
1/2 teaspoon sea salt
1/2 teaspoon baking soda
2 teaspoons baking powder
70 grams white chocolate, chopped coarsely
1 fig, peeled
sea salt
vanilla ice cream
blueberry jam

How to make it:

1. Preheat the oven to 165 C. Line a cookie sheet with parchment paper.

2. Melt the coconut oil in a small sauce pan on low heat. Add the brown rice syrup, almond milk, fig, and vanilla. Stir and remove from fire once combined.

3. Add the flour, coconut sugar, salt, baking soda and baking powder to a large bowl. Stir and add the coconut mixture to the dry ingredients. Add the chopped chocolate and combine until everything is incorporated.

4. Divide the dough into small balls (about 2 cm wide) and arrange them on the baking sheet. Sprinkle with sea salt and make sure the balls are at least 5 cm apart. 

5. Bake the cookies ready in 15 minutes. They are quite soft at first. Let them cool for a few minutes before transferring them to a wired rack. 

6. When the cookies are completely cooled, add a spoon of vanilla ice cream on the bottom of one of the cookies. Add a spoon of blueberry jam and press a second cookie on top of it. Repeat with the other cookies. Enjoy!
