Homemade Elderflower Syrup with Honey
The skies have been grey for days. It rained a lot and it was cold. Too cold. Even the weather anchor on the news said so. But today summer came back. And we celebrated this happy moment with a little picnic. Earlier this week I made my own elderflower syrup. The season is almost over, but if you live in the Netherlands you can still find some elderflowers blossoming here and there. Due to that cold weather actually.
This syrup is very easy to made and the taste is so delicate. Most syrup recipes require a lot of sugar. I really don't like that so I used honey. Which is also a sweetener, I know. But I bough good quality honey and didn't add that much. I love how you can really taste the smell of those flowers in your mouth when sipping the lemonade. Does anyone have a good idea what I can do with the syrup besides adding water? I'd love to know!
Elderflower syrup with honey
20 elderflower heads
1 large (organic) lemon, sliced
100 ml good quality honey
1 liter of water
How to make it:
1. Boil the water in a pan and add the honey. Stir until the honey dissolves. Set aside to cool.
2. Clean the elderflowers to remove dirt and/or bugs. Cut off the stems. Put them in a large bowl.
3. Pour the water with honey over the flowers and add the lemon slices.
4. Cover the bowl with a clean cloth and leave in the fridge for 48 hours. Stir regularly.
5. Sift the syrup through a cheese cloth or a very fine sieve. Storage in a clean bottle in the fridge.
