Strawberry rhubarb shake
When you read this I'll be wandering through the streets of Krakow. But I am writing this while still at home in The Netherlands. I just prepared some date and cashew bliss balls to take with us in the car.
A while ago I read that Krakow is sometimes also called 'Florence of the North' or 'Little Paris'. I like those nicknames. Whether it's true or not, it makes one very curious at the very least.
Today I am sharing a very spring-y recipe with you. A strawberry and rhubarb shake. I developed this drink for STACH food, a company with multiple stores in Amsterdam where you can buy salads, soups, smoothies but also healthy snacks and chocolate by fun and honest brands that are hard to get elsewhere in The Netherlands. Rude Health is an example of this. They make almond milk without added sugars and I really like this brand. So when STACH asked me to make a smoothie with this milk I was more than happy to.
And because I really love the combination of strawberries and rhubarb I decided to use it in my shake. It is super delicious, healthy and really filling. Of course you can also replace the strawberries for other summer fruit. Whatever you fancy!
Strawberry Rhubarb Shake
|serves 2 persons|
100 g rhubarb
200 g strawberries
2 tsp honey (vegans: replace for one or two dates)
1/4 tsp cinnamon
360 ml (1 1/2 cup) almond milk
How to make it:
Preheat the oven to 200 C (400 F). Cut the rhubarb in pieces of 1 inch/2.5 cm. Put them in an oven tray lined with parchment paper. Sprinkle the honey on the rhubarb.
Cook the rhubarb for 20 minutes. Set aside to cool.
Dice the strawberries and slice the banana. Add to a blender together with the almond milk, cinnamon, and some ice cubes.
When the rhubarb isn't hot anymore add the pieces to the rest of the ingredients. Blend and serve right away!
