Chocolate & almond butter popcorn
Popcorn, I have a love/hate relationship with it. I remember my first bag. I was in a movie theater (duh) with my mom, dad, and sister. We were watching Home Alone. After five minutes, a piece of popcorn got stuck in my throat and I think I was coughing for like half an hour.
This peculiar memory of my first bag of popcorn didn't stop me from eating the stuff though. And since I recently discovered how super easy it is to actually pop corn, I find myself making a batch more and more often.
Below you'll find the easiest recipe ever for this great snack. I wouldn't say it is superfood, or very healthy, but it isn't bad either. I mean, popped organic corn, dark chocolate, almond butter and some coconut oil. What's not to love?

Chocolate chunk & almond butter popcorn
Corn kernels (organic)
100 grams dark chocolate (72%), finely chopped
50 grams dark chocolate (72%), chopped into chunks
2 tbsp almond butter
Place a pan with a transparent lid on medium high heat. Add the coconut oil. Drop a few kernels in, and add the rest once they pop. Make sure the bottom of the pan is barely covered with corn. Lower the heat a bit and keep the lid on at all times.
Wait until one by one they begin to pop. When it becomes more or less quiet in your kitchen, your popcorn is done.
Transfer the popcorn to a large bowl and add the finely chopped dark chocolate. It will melt due to the warm popcorn. Stir well. Add the almond butter and stir again to combine. Add the other chocolate chunks when the popcorn has cooled a little, so it won't melt.
Sprinkle with a little sea salt. Ready to serve.
