Green smoothie


I have a cold. During my weekend off. What a bummer! The entire weekend I've tried everything to improve my health, however, nothing seems to work.

I had tea with ginger, lemon and honey, made a huge pan of pumpkin soup (never a bad idea ;)), and went to the farmers market to get some veggies and fruit for a super healthy smoothie. Yeah, that's what the title of this post is about (and no it doesn't refer to my cold). I guess it'll just take a little time before this is over. If you guys have any health advise on how to get better, let me know!

Of course having a cold has benefits too. It total makes sense that you tune out for a couple of days right? (I.e. Gilmore Girls marathon, laughing out loud during Julie & Julia (LOVE that movie) and daydreaming of sunshine and holidays while watching my favorite travel program on Dutch tv). 

Whether this green smoothie helps right away, I don't know, but it's freakin' healthy for sure! It contains spinach, which is loaded with vitamin K and A, calcium, potassium, iron, magnesium. It's a boost for the immune system. There's also cucumber, celery and lots of fruit in this smoothie. And best of all: it tastes delicious. 

Green smoothie with spinach and celery

Makes 2 glasses:

40 grams of spinach
125 grams of cucumber
4 leaves of mint
Half a stalk of celery
Half a mango
1 banana
Juice of half an orange
150 ml coconut water
2 fresh dates, pitted
1 tsp bee pollen
1 tsp chia seeds

Wash the spinach, peel the stalk of celery and cut the cucumber, mango and banana in pieces. Add the dates and the mint and throw everything in the blender. Turn the blender on and there you have your green monster!
